Chef + Founder Tatsu Aikawa designed dipdipdip to be an interactive playground where diners can explore different varieties of nabemono, or simply nabe. Handmade earthenware pots are one of the dish’s signatures, and what keeps the broth and its meticulously-sourced ingredients steamy.
